I note that I pronounce "jewel" differently depending on whether it is, or is not, part of the word "jewellery".

I think i saw jooel but the e is really little whereas I say jooEllery

Not sure of the phonetics of your 2nd option for jewel... but the other two aren't quite what I say, so I chose it ;)

It's meant to represent a sort of 'uh' sound, so probably 'joo-ul' (or maybe 'joo-wul') might have been clearer, sorry!

I selected jooəl, but I'm certain that I articulate another sound after the "j", albeit weakly, making it more like "jyooəl". I sometimes notice myself doing it, and think it sounds a bit prissy.

Ah, interesting: I associate an exagerrated version of that with panto villains and the like: "jee-oo-wəl".

Does that also come in on words such as jewish, juniper, juice?

"Juice", yes, "Jewish" and "juniper", no - it seems as if a second, fully enunciated syllable kills it off. It also doesn't affect "jew" - in fact, if I say that with the interpolated "y", it takes on a suggestion of distaste and actually sounds quite offensive.
